Poppy Seed Chicken

Brooklyn got her stitches out today, so that meant we got to go for a walk! The first one in 2 weeks and we both loved it.

For dinner we had Poppy Seed Chicken. It’s quick and easy and oh so delicious!



3 cups cubed cooked chicken breast (I cooked my chicken and then kind of shredded it)

2 cans (10 3/4 oz each) condensed cream of chicken soup, undiluted

1 cup (8oz) sour cream

2 teaspoons poppy seeds

1 cup crushed butter-flavored crackers

3 tablespoons butter, melted

1/3 cup grated Parmesan cheese


1. In a large bowl, combine the chicken, soup, sour cream and poppy seeds. In a small bowl, combine cracker crumbs and butter; set aside 1/2 cup for topping. Stir remaining crumbs into chicken mixture.

2. Transfer to an 11-in x 7-in ( I used a 13 x 9-in pan) baking dish coated with cooking spray. Top with reserved crumbs; sprinkle with cheese. Bake, uncovered, at 350 degrees for 30-35 minutes or until bubbly.


I love mixing pink with pretty much anything, but I love it with a minty green.
