I got a cast iron fajita skillet for Christmas and finally broke it in this past weekend! The skillet was part of a kit that included a recipe, seasoning and two different hot sauces.
The red and green peppers, mushrooms and chicken plus the seasoning made this dish look so colorful and so delicious.
red and green bell peppers (throw in some yellow for even more color)
soft tortilla shells
Pre-cook the chicken (I cooked mine in a skillet with water to keep it nice and juicy). After it has cooled a little, shred or chop into smaller pieces. Slice peppers and onion into thin strips. Sauté the onions and peppers in a little oil until tender. Add the mushrooms and chicken. Once warmed through mix in the fajita seasoning. Warm up the tortilla shells for about 15 seconds then top with the chicken mixture, cheese and sour cream!
